Michigan’s Best Local Eats: Try the crispy pork belly, five spice duck breast at Flint area virtual restaurant

GENESEE COUNTY, MI — A boutique-style virtual restaurant located inside of a Flint area steakhouse has the perfect dishes for foodies who want to explore different and bold flavors.

The Macanese Grill, located inside the Redwood Steakhouse and Brewery at 5304 Gateway Center in Mundy Township, simply offers a pick-up area for customers to retrieve their meal and enjoy at home.

Chef Luis Fernandes, executive chef and managing partner of Redwood Steakhouse, operates and owns the Macanese Grill, which features a fusion of recipes from his Portuguese and Chinese roots.

The chef has training and experience ranging from cooking at a college campus, Hilton hotels and a restaurant group in Chicago owned by Taiwanese immigrants.

The modest, but packed with flavor, menu offers five spice duck breast, yum yum shrimp, tamarind garlic ribs, crispy pork belly, ancho chili lamb chops, barbacoa style ramen noodles and more.

Fernandes prepares most meat with a marinade, and that’s no exception for the fried pork belly.

The meat is marinated in a ginger, garlic and soy sauce mixture, lightly coated in rice flour and then deep fried.

“If you’re looking for healthy, that’s not the way to go,” the chef said with a chuckle.

The pork is sliced and served with a side of dipping sauce that has a base of hoisin sauce and includes garlic, ginger, sesame oil and green onions.

The tamarind garlic ribs are smoked and then coated with a Korean batter, deep fried and then tossed with a ginger-garlic sauce.

Another dish customers have added to their list of favorites is the duck breast. It’s prepared with a marinade and then seared.

Items on the menu range in price from $8 to $19.

The unique element about the eatery is it only opens twice a week, so it would be best to plan ahead to be sure to get exactly what you want on the menu.

Customers should place orders on Monday in order to get their meals on Tuesday and order on Wednesday for Thursday.

The grill, still a work in progress, only began two months ago, Fernandes said.

“I’m trying to go after a different market that wants to explore different things,” the chef said.

In the future the items at the grill could eventually end up on the menu at the steakhouse, a food truck and for catering opportunities, Fernandes said.

“If somebody wants to be adventurous and not afraid to try, that’s the way to go,” he said of the virtual eatery.
